Me & Mummy Avocado

An express meal when you haven't had time to prepare anything or have forgotten to take something out the freeze. The bonus is it makes a super healthy, power-packed lunch for you too.

BLW Tip: keep a couple of slices of avocado back - place on the highchair tray whilst your baby is eating and see how they touch, play and potentially pick up the avocado. Its a great way to get them used to using their gums to mush down food before they get any nashers.

1 very ripe avocado, peeled, stoned and roughly chopped

and for you:

1/4 tsp salt

a pinch of chilli flakes

a squeeze of lime

a couple of slices of toast

leaves

toasted seeds (optional)

Place the avocado in a food processor and blitz down for 1-2 minutes until completely smooth. Scoop out one heaped tablespoon into a feeding pot and set aside. Now remove the remaining puree into a small bowl, add 1/4 tsp salt, a pinch of chilli and a squeeze of lime. Spread over your toast and top with leaves, a drizzle of olive oil, a little more salt and some toasted seeds. Enjoy with your little one.
