3 ways with pumpkin

Every October I get dozens of requests for ways to use all the pumpkin flesh after you've been busy carving for Halloween. Below are three fantastic and nourishing ways to use your leftover pumpkin but firstly - chop it up - boil it for 30 minutes - blitz into a puree - get cooking.

Pancakes are always a winner in our house so its the perfect opportunity to sneak in some extra veggies. This recipe makes the fluffiest pancakes and when you don't have any pumpkin just substitute it with butternut squash puree or sweet potato.

oven-baked risotto

Most parents shy away from risotto as the traditional method is pretty time consuming and hands on. This recipe however just requires you to pop the oven on, chuck everything into an oven-proof dish and place in the oven for half an hour. Voila.

I absolutely adore this soup and it couldn't really be easier - only 5 ingredients and all you need to do is pop them in a pan and bring to the boil. Its extremely versatile too as you can add a whole host of other ingredients to make your meal more substantial.
